Laura Chambers' Texas Buttermilk Pie
½ cup butter
2 cups sugar
3 round tablespoons of flour
1 cup buttermilk
1 teaspoon vanilla
1 deep dish frozen pie crust
Cream butter and sugar.
Add eggs, beat well.
Add flour, mix well.
Add buttermilk, mix well.
Add vanilla; stir well (do not beat vanilla).
Pour into unbaked pie shell.
Bake on baking sheet at 350 degrees until set (about 50-60 minutes).
The pie should not jiggle and should be brown on top.
If the pie is brown on top and jiggles a little, I usually go ahead and take it out of the oven.
This pie freezes well if you let is cool completely and store in a zip-loc bag.
