John's Sweet Potatoes for 2006 Office Christmas Parties
Potato Ingredients
3 cans (1 lb 13 oz each) of sweet potatoes drained
¾ to 1 cup of brown sugar
6 tablespoons of melted butter
½ teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
¼ teaspoon salt
¾ teaspoon nutmeg
1 cup heavy shipping cream
1 egg + 1 egg white (beaten)
Topping Ingredients
1 cup chopped pecans (cookie pieces)
1 cup brown sugar
½ cup flour
Sprinkle of ground cloves
4 tablespoons of melted butter (try 6 next time)
¼ teaspoon vanilla extract
Directions
Mix potato ingredients well; pour into 3 quart buttered casserole.
Mix topping ingredients well; sprinkle over potatoes.
Bake uncovered 400º for 40 minutes.
